Dough

Back in February 2020, just before the world went into lockdown, Kyle had the pleasure of meeting Rachael and Kai Binder for the first time. They were brought to LLK’s demo kitchen by design house Vision Commercial Kitchens, armed with the idea of creating a space in their hometown of Hindley where locals could enjoy superb pizza whilst staying local and not having to travel into city centres. Fast forward to November 2021, when the world had started returning to some kind of normality, the couple came back to LLK’s demo kitchen with the same vision and even more determination to get the wheels in motion.

Rachel and Kai had a mission to make Hindley a better place to live with more options for food and drink, following the success of their first eatery: ‘Summat to Ate’. The husband-and-wife team wanted to offer the lovely people of Hindley a different dining experience which would complement Summat to Ate and not detract from it. Rachael said, “Due to loving pizza ourselves, the idea to make really good pizza was born and we just ran with it!”

Run with it they did! Multiple visits to LLK followed, with Kyle helping to make the decision on what equipment would work best for them. “It was a pleasure working with LLK to find the perfect pizza oven for us! Kyle was patient and allowed us to visit several times to try different ovens, doughs, toppings etc”. In the end, the oven of choice was The Giovanni: a living flame pizza oven with a rotating cooking floor. This magnificent oven was paired with the Cuppone pizza dough press: a dream team which would make production quick and easy, taking away some skill and labour requirements. Happy with their choices, Rachael said: “The equipment we have purchased makes it easy for us to prep our dough balls ready for topping. The oven is great and gives the perfect finish to the pizzas by the flame!”.

Team LLK has been working hard to bring the best quality ingredients to all our demo kitchen visitors to help make their product-sourcing journey that bit easier. During their visits to LLK, the team at Dough tried, tested, & fell in love with products from two of our brand partners: Pan Artisan and Properoni. Dough is now a proud customer of both!

Before Dough launched, Rachael and Kai utilised LLK’s support services, bringing their team to LLK’s kitchen in August 2022 for training and then getting Kyle on-site to give further training right before their soft launch on 4th October 2022. “Even when we had made our purchase the help continued with full training, help and advice. I think it’s safe to say we wouldn’t have been able to open Dough without the help from LLK.”

So, what does the future hold for Dough? According to Rachael: “We hope to continue providing the best pizzas in the area. We will experiment with different specials and toppings to always bring something new and exciting to customers!”
